Inside Expo West 2026: The Food & Beverage Trends That Stood Out

Natural Products Expo West is always one of the most exciting weeks in the food and beverage industry. With thousands of new products launching across beverages, snacks, frozen desserts, and functional foods, the show floor offers a real-time look at where innovation is heading.

After spending several days walking the floor at Expo West 2026, a few themes quickly stood out. While beverages continue to drive much of the industry’s innovation, we also saw interesting developments across dairy, frozen desserts, and snacks.

Some of the biggest themes this year included the rise of everyday wellness, benefit stacking in functional products, better-for-you beverages, and renewed interest in real, recognizable ingredients.

Here are some of the trends that stood out most across the show.

Functionality Is the New Baseline

Functional foods and beverages are nothing new, but what felt different this year is that functionality is no longer a niche differentiator — it’s increasingly expected.

Rather than focusing on a single benefit, brands are now layering multiple wellness attributes into one product. This concept of benefit stacking was visible across beverages, bars, snacks, and even frozen products.

Common combinations included things like:

  • hydration + electrolytes + minerals

  • fiber + protein

  • adaptogens + mood support

  • protein + creatine

In many cases, brands are positioning these products as part of a daily wellness routine rather than a specialized functional product.

This shift reflects the evolution from the “food as medicine” narrative toward something that feels more approachable: everyday wellness.

Beverages Are Replacing Supplements

Another noticeable shift across the show floor was how many beverages are now delivering benefits that traditionally lived in the supplement aisle.

Instead of pills or powders, consumers can increasingly get these ingredients in drinks that fit naturally into their daily routines. At Expo West, we saw beverages incorporating ingredients like creatine, collagen, magnesium, fiber, electrolytes, and adaptogens across a wide range of formats.

Creatine appeared in several RTD beverages and soda-style drinks, while magnesium showed up in products positioned for relaxation and evening wind-down routines. Prebiotic fiber was everywhere—from better-for-you sodas to functional hydration drinks—and collagen continued to appear in coffee beverages and beauty-oriented wellness drinks.

In many ways, beverages are becoming a delivery system for everyday nutrition, allowing brands to combine flavor, convenience, and functional benefits in a single product.

The Continued Expansion of Better-for-You Soda

The influence of modern soda brands like Poppi and Olipop was still very visible across the show floor.

These beverages typically combine:

  • prebiotic fiber

  • lower sugar levels

  • nostalgic soda flavors

  • relatively low-calorie counts

While the category initially focused on digestive health, we’re now seeing it expand into new functional territories including protein sodas, creatine drinks, and mood-support beverages.

Better-for-you soda has effectively become a platform for broader beverage innovation, influencing adjacent categories like sparkling hydration and functional teas.

Hydration Has Evolved Into “Functional Hydration”

Hydration remains one of the largest beverage categories, but the concept has evolved significantly. In addition to traditional sports drinks, we saw brands experimenting with coconut-based hydration beverages, fruit-forward refreshers, and multi-functional hydration drinks.

Many hydration drinks we saw at Expo West were no longer focused solely on electrolytes. Instead, brands are building multi-functional hydration beverages that combine several wellness benefits in one product.

Some of the combinations we saw included:

  • electrolytes + minerals

  • hydration + gut health ingredients

  • hydration + cognitive support

  • hydration + mood-support botanicals

Rather than positioning hydration strictly for athletes, many of these products are marketed as all-day wellness beverages—something consumers might reach for in the morning, during the afternoon slump, or after a workout.

Hydration is increasingly becoming a platform for broader functionality, rather than a single-purpose product.

Protein Is Moving Into More Drinkable Formats

Protein was one of the most visible ingredients across the show floor.

Instead of traditional protein shakes, brands are experimenting with lighter, more refreshing formats like:

  • protein water

  • clear protein beverages

  • protein coffees

  • protein sodas

This reflects a broader trend where protein is becoming a baseline nutritional expectation, not just a sports nutrition product.

Consumers still want the benefit—but in formats that feel easier to drink throughout the day.

Fiber Is Showing Up Everywhere

One ingredient that seemed to appear across multiple categories this year was fiber.

Prebiotic sodas, fiber-fortified beverages, snack bars, gummies—you could find fiber in almost every aisle of the show floor.

Brands are leaning into gut health because it connects to several consumer priorities at once, including digestion, immunity, metabolism, and even mood.

While protein has dominated product development conversations over the past decade, fiber is starting to play a similar role in many new formulations—especially in beverages where it can support digestive health while also contributing to satiety.

Given the number of products featuring fiber at Expo West this year, it’s safe to say this ingredient will likely continue to gain attention across multiple categories.

Mood, Focus, and Relaxation Drinks Are Expanding the Functional Beverage Space

Another noticeable area of innovation was beverages designed around specific daily occasions rather than broad health claims.

Across the show floor we saw drinks positioned for moments like:

  • morning focus

  • afternoon energy resets

  • post-workout recovery

  • evening wind-down

Many of these beverages featured ingredients such as adaptogens, mushrooms, botanicals, or nootropics.

What stood out wasn’t just the ingredients themselves, but how brands are framing them. Instead of presenting these products as clinical solutions, companies are positioning them as part of everyday routines and rituals.

This shift reflects how functional beverages are moving beyond traditional categories like sports nutrition and energy drinks, expanding into products designed to support different moments throughout the day.

Dairy Is Making a Quiet Comeback

Although plant-based products remain prominent, Expo West also showed signs of renewed interest in dairy-based products.

Many brands are leaning into dairy’s natural strengths, including:

  • high-quality protein

  • naturally occurring nutrients

  • creaminess and texture

Dairy appeared in formats such as high-protein beverages, yogurt drinks, and frozen desserts.

Rather than competing directly with plant-based alternatives, some brands are positioning dairy as a naturally functional ingredient.

Flavors That Were Everywhere

Walking the Expo West floor always reveals a few flavor themes that appear again and again across categories.

This year, tropical fruit flavors were especially common, appearing in beverages, frozen desserts, yogurt drinks, and snacks. Mango, passion fruit, guava, and pineapple showed up frequently across refreshers, smoothies, and fruit-forward beverage blends.

Nostalgic soda flavors were also everywhere, especially within the better-for-you soda category. Orange cream, root beer, cola, and fruit punch profiles were being reimagined with lower sugar levels and added functional ingredients.

We also saw continued interest in botanical and herbal flavors, including ginger, hibiscus, and various herbal blends.

Rather than single-flavor products, many brands are leaning into layered flavor combinations that create more complex flavor experiences.

A Few Things We Saw Again and Again on the Expo Floor

One of the most fun parts of Expo West is seeing the variety of creative ideas brands bring to market.

A few things that seemed to pop up repeatedly across the show floor included:

  • protein showing up in unexpected places like sodas, sparkling drinks, and water

  • functional “shots” and stick packs designed for very specific occasions

  • creative alcohol alternatives featuring botanicals, adaptogens, or hemp-derived ingredients

  • unique plant ingredients and unexpected beverage bases such as sparkling okra water

  • coconut and coconut-derived ingredients appearing across hydration beverages, smoothies, frozen desserts, and dairy alternatives

These types of products highlight how quickly the definition of what a beverage can be continues to expand.

Final Thoughts

Expo West 2026 reinforced just how quickly the food and beverage landscape continues to evolve.

Consumers are increasingly looking for products that combine real ingredients, meaningful functionality, and vibrant flavor experiences.—whether that’s a fiber-fortified beverage, a protein soda, a functional hydration drink, or a fruit-forward frozen dessert.

While beverages remain one of the fastest-moving areas of innovation, many of the ideas we saw this year are extending across categories—from snacks and dairy to frozen and functional foods.

For product developers, the opportunity lies in creating products that balance functionality, ingredient transparency, and enjoyable flavor experiences.

Expo West always offers a glimpse into where the industry is heading—and it will be exciting to see how these trends continue to develop over the coming year.
