Prickly Pear Puree Products

The prickly pear is a fruit with a flavor reminiscent of watermelon, but with a more granular texture. Prickly Pear contains many flavonoids, including quercetin. The fruit also contains vitamin C, Ca, Mg and characteristic betalain pigments resulting in its characteristic red color. Spray drying the juice of betalain-rich prickly pear, can be used as a natural red food colouring in yogurts and soft drinks.
