We hope this newsletter will be a source of valuable information for you about tropical fruits, our products, suppliers, and our company. Each issue will highlight a particular tropical fruit with facts, nutritional information, and recipes. Mango Did you know there are 500 named varieties of mango? It's true! Perhaps some are duplicates by different names, but at least 350 varieties are propagated by commercial nurseries. Most mangoes are consumed throughout the world as fresh, but mango is quickly gaining popularity as an ingredient in processed foods. Mango has substantial levels of potassium, Beta-carotene and vitamin C, while being low in fat and sodium. All that and great taste too!

Mango varieties have a broad range of origins, colors, flavors and seasons. They can be oval, round or even kidney-shaped and range in length anywhere from 2.5 to 10 inches. Weights of individual mangoes range from a few ounces to four or five pounds. Outside they may be green, yellow-orange or even a reddish-pink but the flesh on the inside is always in the yellow to deep orange range with a fibrous peach-like texture.

ITI imports mango from several different countries around the globe and at different times of the year. The harvest season for any particular variety is short (only 2-4 months) and, as with any agricultural product, yield and costs vary with crop conditions. One might say that over recent years, the US has really developed a taste for mango…and so have we!

Mango is used in beverages, yogurts, ice creams, sorbets, bakery items, specialty sauces, chutney, salsa and a host of other applications. The flavor profile is sweet to slightly acidic, fruity, and goes well blended with other fruits or as a signature topnote in a sauce. ITI carries mango concentrate, puree and IQF dices in several varieties.


Mango-Tomato Salsa

16 oz. ITI 3/8" IQF Mango Slices
1 large tomato, peeled and cubed
1/2 cup minced onion
1 large red or yellow bell pepper,
   seeded and finely chopped
1 tbsp.l habanero pepper, chopped

Combine all ingredients and enjoy!
