Coconut
The inside of a coconut is filled with coconut water which contains proteins, sugar,
antioxidants, fibre, vitamins and minerals. Coconut water provides an electrolyte balance,
and is a very nutritious food source. It is used as a drink throughout the tropics and is
also used in sports drinks. Mature fruits have significantly less liquid than young immature
coconuts; coconut water is sterile until opened. It is also used in many tropical drinks,
such as the Piña Colada.
Coconut milk is produced when grated coconut is simmered with water or milk, which
releases the oils and aromatic compounds. Coconut milk has a fat content of 17%. When
refrigerated and left to set, coconut cream will rise to the top and separate from the milk.
Coconut cream is used in many flavored drinks and recipes.
